sexy vegan radidio: slow roasted chimichurri cauliflower steak, on a grilled baguette

2 loosely packed cups italian parsley
2 loosely packed cups cilantro
1 small shallot, peeled, roughly chopped
4 cloves garlic
¼ cup loosely packed fresh oregano leaves
1 - 2 teaspoons minced jalapeno (depending on how hot you want it)
½ cup red wine vinegar
2 ¼ cups extra virgin olive oil
¼ teaspoon salt
salt and pepper to taste
Place all chimichurri ingredients into a blender or food processor. Process until blended together. No need to completely puree (although I was using my vitamix, so it was kind of tough to not end up with a puree). Either way is fine. Season with salt and pepper to taste and set aside.
4 cauliflower steaks (you’ll probably need 2 large heads to get the center cuts that hold together)
2 tablespoons cumin
2 teaspoons ground coriander
1 teaspoon granulated sugar
1/2 cup chimichurri (see recipe)
1 packed cup baby spinach
8 ½ inch thick slices heirloom or beefsteak tomatoes (about 2 tomatoes)
4 5-to-6 inch-long French-bread baguette segments, halved lengthwise (so you have tops and bottoms)
olive oil for brushing the baguette
Now that your grill is hot, brush the cut sides of the baguettes with olive oil, and grill for 45 to 60 seconds, until you have some grill marks. You can also place the baguettes under a high broiler for about 30 seconds.
Once the baguettes are grilled it’s time to assemble the sandwiches. Brush each side of the baguette with chimichurri. Starting from the bottom: Place 2 tomato slices, and season them with salt and coarsely ground black pepper. Place a cauliflower steak on top of the tomatoes. Drizzle a little more chimichurri on the cauliflower. Add baby spinach, and top with the other piece of baguette. Wipe up the drool that has accumulated on the counter over the course of the preparation of this sandwich, and proceed with unbridled consumption.
