Serves 4...or 1
6 Roma tomatoes
1/2 large onion, cut into big chunks, layers separated
1 - 2 jalapeño peppers
handful fresh cilantro
2 cloves garlic
Juice of 1 lime
1 teaspoon salt, plus more to taste
1/8 teaspoon pepper
Chips to taste
Arrange oven rack to the top level. Heat broiler to high. On a lightly oiled sheet pan, place the tomatoes, onion, and jalapeño.
Broil for 4 to 5 minutes until veggies are charred and/or blistered. Flip veggies and broil on the other side 3 to 4 minutes until charred and/or blistered. Set aside to cool slightly, and remove the stem from the jalapeño.
To a food processor add the broiled veggies, along with the cilantro, garlic, lime juice, salt, and pepper.
Blend to a slightly chunky consistency, and season with salt and pepper to taste. Best if served after being refrigerated for a few hours or overnight to allow the flavors to marry....or you can eat it with chips right out of the food processor like I do. Your call. Enjoy!
