edamame wonton soup
2 cups shelled frozen edamame
4 scallions, thinly sliced
2 teaspoons minced ginger
2 cloves garlic, minced
1 teaspoon grapeseed oil
1 tablespoon chopped cilantro
1/2 teaspoon sesame oil
1/4 teaspoon salt, plus more to taste
pepper to taste
20 square wonton wrappers
8 cups chicken style vegetable broth (my favorite is Edward and Sons Not-Chick'n Bullion)
1 teaspoon sesame oil
2 teaspoons rice vinegar
salt and pepper to taste
Bring a medium pot of water to a boil, and carefully drop in the edamame. Boil 5 to 7 minutes until tender. Remove and cool in an ice bath. Drain and let dry.
In a medium skillet, heat the grapeseed oil on medium. Add half of the sliced scallions, all of the ginger and garlic. Cook on medium, 3 to 4 minutes until slightly tender and fragrant.
Add the edamame, cooked scallions, ginger, garlic, cilantro, sesame oil, salt, and pepper to a food processor. Process, scraping down the sides if necessary, until a mostly (but not completely) smooth mixture is achieved. Season with salt and pepper to taste, and transfer to a bowl.
Now it's time to make the wontons and the broth. Add the broth ingredients to a pot and bring to a simmer. Allow to gently simmer while you make the wontons. I used a little less than a tablespoon of filling per wonton, and I got 20 pieces.
