Makes 10 - 12 servings.
1 pound dried pinto beans, picked over to make sure there are no rocks
2 bay leaves
1 large onion, cut into large chunks
5 garlic cloves, smashed
salt to taste
In your pressure cooker, add the beans, bay leaves, onion, and garlic, and cover with water so they are covered by about 2 1/2 inches. Place the lid on top and lock it.
Heat on high, until the cooker comes up to pressure, then reduce to low or medium low, or whatever will keep the pressure at a steadily high level (once you have a little pressure cooking experience this will come easy.
Cook at high pressure for 40 minutes, then turn of the heat and allow for natural release. Season the beans with salt to taste, and store them in a large container in their liquid for up to a week.
