I'm feeling more stamina and strength. And better recovery after long days of work on my feet and lifting heavy things in a commercial kitchen.

1 cup quinoa, rinsed
1 1/2 cup water
1 medium cucumber, peeled, seeded, and diced
2 roma tomatoes, seeded and diced
1/3 cup diced red onion
juice of 1 lemon, plus more to taste
1/2 cup finely chopped italian parsley
1/4 cup chopped mint
salt and pepper to taste
In a small saucepan add the quinoa, water and a healthy pinch of salt. Bring to a boil, then reduce to a simmer for about 12 minutes or until the water is absorbed. Spread the hot quinoa out on a pan or large plate to help it cool faster and prevent over cooking.
Once the quinoa is cooled, place it in a large mixing bowl, and add the remaining ingredients and mix. Season with salt, pepper, and additional lemon juice to taste.
